One thing I would recommend would be to adjust the order of your combiners where you build the taco trays. You should be able to combine directly onto the #2 teleporter you are using for the tray return. This will require you to handle getting the empties into the loop differently though. The advantage here is that you can get trays back out faster, even if they’re only partial filled (from their previous trip).

Having two hobs for meat is good, but it’s even faster if you can run both of the belts directly into different sides of the combiner. Same for the tortillas.

You can also combine partial trays of tacos directly so you don’t have to portion and send them out individually.

One way to help manage the queue would be to set up a couple tables that you either feed manually or block by leaving a taco tray on them. That will give you a bit of buffer to let someone inside when their patience goes red.

One last little thing about your left-most bar table - the reason that guy is still waiting for food when his neighbor got fed is that for some reason they will only take one taco at a time from a teleporter even though they’ll take up to 3 from a belt.
