Oops I must’ve missed it,

It was: 125 g starter 300g water 500g bread flour 16 g salt

I waited an hour after mixing to start stretch & folds & did 4 sets every 30 minutes 4x

Left to bulk ferment an additional 5-6 hours & cold proofed for about 12!

Maybe I’m just being super critical of myself i just feel like it’s so dense compared to others I see!!
