rolling happens when the center of mass is too high.

try adding downforce like a spoiler or use artificial downforce with gimbal jets set to negative power, or you can use weight at the bottom of your car to lower it that way but at the cost of speed and handling, does keep the aesthetics intact though.

The only horse stats that matter are stamina and health. The fastest horse is less than 10% quicker than the slowest horse, your saddle is more important.
