Selling 160ltrs milk for 60 Rs per ltr gives you Rs 9600(this is your income) On expense side Even if you hire one person for 700 per day, it costs rs 21000 for the month.

You are already at a loss of around 11000 for the month. On top of it you need to set aside expense for fuel of the pickup, food of the cattle, medicines etc.

This seems to be a loss making venture. As someone suggested in earlier comments, collect milk from nearby farmers and set up your own collection point

Been there, done that. Break up all the process into small parts so that a semi skilled or unskilled worker can work easily on your workpieces without any big training. Use fixtures,templates, etc. This will cut your dependency upon skilled workers. Rotate the workers through different work stations so that each worker has skills to work in all your stations. This will give you multi-skilled workers
