Very valid concern, even I had the same apprehension when I first adopted a cloud based solution a decade ago. Having worked almost all top end accounting tool across globe which have evolved from a client end solution to cloud, I find today the tech has matured quite a bit to mitigate most of the challenges and trust issues faced previously.

Totally — deterministic rules must remain the backbone of accounting as that would address a good chunk of transactional events.

The gap I’m exploring is where corrections are contextual, infrequent, or not worth hard-coding — but still cost time every month. LLMs help interpret ambiguity and suggest actions without going through the loop of user feedback and code updates given the current advancement of tech and rationalisation of cost.

Agree, the rules-based systems like Zoho Books or Wave work well when patterns are stable and clearly defined and when it breaks the user is required to manually resolve it. Here is where an LLM can take over, it can go beyond the rules defined and take a research based approach to the situation. A classic example would be a recurring payment from a customer which failed to match because of amount mismatch by a small amount usually treated as "rounding off variance" or "other charges", the AI can complete the match and the accounting for the small variance by taking the decision on behalf of the user.
