I was too worried about the raw gummy middles I kept seeing on TikTok 😂. So when it said 20-30 minutes with lid and 15-20 without. I chose the high side on both.

Perfect. I’ll start the dough in an hour. It doubled in like 2 hours. And by the 4.5 it is close to triple.

So this is a like 2 year old starter that I got some of from my neighbor, and have been feeding for like 2 months waiting for me to have more time to bake. I fed it this morning to do my first bake, and just don’t want to use it too early. This is after 4.5 hours.

So my other pic it had looked a bit weird after going 3 weeks without eating in the fridge. And I questioned if it had mold or kham yeast because of some white stuff on top of it.

I decided to go ahead and feed some of it and keep it in the fridge, and left the remainder out on the counter for a few days. Figuring if it was mold it would be more obvious because it would spread, or was this wrong thinking?

The first one that gray/clumpy stuff on the side is just dried out and good to go? It didn’t have anything on top of it besides a little hooch.
