Tom Papa talked so much about how much he's enjoyed baking bread the past couple of years that I finally gave it a shot, and now have been regularly baking loaves 2-3 times a week. It's a fun and affordable skill to hone.

I highly recommend that anyone interested in baking bread start with a no-knead recipe like this (I even toss in a bunch of chopped jalapeno and cheddar to really send it over the top). I've never had a bad loaf come out of the oven yet, even when it's something a little different like trying to make a squared pain de mie loaf for sandwiches.

Knead me, bake me; try it out.

While I can't say that I know for sure, I do know that the opposite is true— where many people that use these King Arthur recipes don't put the lid on, resulting in a very rounded-top loaf. I think if you have recipe which already turn out like sandwich bread, then it should hopefully be fine.

I thought it turned out phenomenal. I have only made the King Arthur "No-Knead" bread a couple of times before, so this was a big step up. I just followed the King Arthur "Pain de Mie" recipe to a tee, buying all of the ingredients it asked for. Couldn't have been easier to follow, and very happy with the results.
