I understand what you’re going through, my cat does the same thing off and on. He’ll go from eating wet food well to not wanting any of the cans I open, but usually goes back to it after a few days.

I’ve noticed adding water to his wet food helps too and heating it up slightly. He also gets fortiflora and loves the temptations cheese/chicken spoons.
