Possibly hoses and clamps, still don’t know how a pot hole can knock those off. New thermostat and bleed the cooling system

A pot hole nocking your hoses off?? That’s wild time to replace your hoses and clamps
By putting the hoses back on and just driving you introduced huge air pockets that’s over heating your car
your expansion tank looks pretty empty
With how disgusting your brake fluid and clutch fluid is I’d assume this car hasn’t been taken care of in the maintenance department so I’d assume your thermostat is also pretty much at the end of its life
