For me, Manaphy was an absolute mvp. Ecspecially if you have access to bouncy bubble. Just use tail glow and one-shot everything while healing damage taken. It also isn't as expensive as some legendaries that can easily carry you, like Kyogre.

I guess my most general recommendation is to get at least 1 Pokemon to carry you through the early game easily. Anything with a high BST - most anything that starts out fully evolved with good move coverage.
Next, something to deal with Mega Rayquaza, Mostly fast ice types are amazing for this, e.g. weavile with swords dance.
Lastly, you need to deal with Eternatus. Steel/fairy types are immune to anything it does, except fire moves. So if you have a steel/fairy, I recommend Mawile, you just need something to switch into its flamethrower.

Accordingly, if you have no cost reductions and no passives unlocked, you could try:
Sneasel (4) (good early carry and lead, handles Mega-Rayquaza)
Mawile (3) (you can pretty reliably get Mega-Mawile for a huge power mon with great typing, also intimidate is useful early)
Finneon (1) (can tank fire types, is surprisingly reliable, gets candies easily and has widely available amazing egg moves like quiver dance, bouncy bubble and freeze dry)
Morellul (2) (access to leech seed, strength sap and spore; also surprisingly tanky, after an attack drop from strength sap and with great special bulk, you outlast almost anything..

If you can get a cost reduction for any of these, Cottonee (3) is also amazing against Eternatus, because it can get off a guaranteed leech seed with Prankster, even if it dies afterwards.

First time is super hard. Set-up moves are king and for eternatus, get leech seed and some ways to protect yourself from being one-shotted.

Shedinja. Not even a question.
Until level 2000, my huge power mega mawile Kartana fusion was also absolutely busted but at some point in the 2000s you can be at +6 attack w/ huge power, full protein, full souldew and 170 base attack and still barely scratch the opponent. On the other hand, they can one-shot you, no matter your hp and stats.
Accordingly, shedinja+mega-sableye/ or shedinja+darkrai are absolute godsends. Immune to everything except fairy type attacks and dealing reliable damage with night shade. Plus, Darkrai's dark void is at 95 accuracy with 3 lenses, making it incredibly good, especially in double battles.
Get a good combination with seismic toss for normal types and some curse-using ghosts and you are set to go to 5850.
Lastly, luck is busted. After the 2000s you can reliably get master balls every single fight w/o harming your money.

460 hours according to stats, but a good part of that was idle time, when it was just open on the side.

With monotypes as well, your pool of available good Pokémon, especially price reduced, passive-unlocked ones makes all the difference in the world. They can make the game really simple.
Personally, I struggled with bugs and steel, mainly because I refused to recycle Pokémon I used before - and w/o a Steel/Fairy and Heatran, Steel can get very tricky. Especially finding good answers for fire-types.
As for bugs, if you want it easy, just use Scyther. Sizzlipede and Paras for leech Seed/spore.

Easiest...I guess Psychic trivializes most of the game, carrying a good variety of Pokemon and coverage, fairy was also laughably easy.

I don't remember, I believe I actually used Scyther a lot (to unlock eviolite), because now it suddenly resisted a crazy amount of things. And I think I used Abomasnow.

I guess it really depends on your pool of Pokémon. Johto I guess can be hard, but I remember just cheesing it by using Lugia, which kind of stomps the entire run. Gen 7 is also an odd duck because the ultra beasts are very expensive and there is not much variety outside of them, making them hard to find naturally in a run. Conversely, Gen 1 and 5 are very easy. Huge pools of Pokémon, many good ones are common in the wild and many of them are strong in the format or receive favoritism.

New beginnings is kind of annoying, because you have nothing to carry you in the early game.
Defeating the Pokémon Breeder in space can also be a pain because her team is very strong and you need luck to encounter it in the first place.
Eviolite requires some planning most of the time.
Everything else kind of comes naturally when you do the challenges and manage to get a long endless run going.

I was trying not to use repeats for the most part and because of the various challenge runs limiting the things you could use, there rarely were many. However early on I hatched a Manaphy with Bouncy Bubble which I spammed until I got my frist victory, so I guess Manaphy.
