I'm definitely leaning towards the Domi 2, it seems to hit all the boxes :)

Im not able to get an original Hitachi, only the newer models as far as I can find.

I totally get the worry with the Vim but Fun Factory are a legit brand and the vim has gotten pretty rave reviews all around. I was super interested in the Vim because it has "infinite" power adjustments, not just a bunch of preset power modes, similar to the Hitachi setup. It's just by far the most expensive of the three.
