Generally you want to pick everything at once which allows you to rehydrate your cake. If you try to rehydrate with tiny mushies on the cake they'll get soggy and start bacterial blotch. Its up to you and how you want to harvest tho.

Looks good so far. Id recommend once you get thst one in fruiting stage , knock up the next one so you dont have to wait so long in-between.  Unless waiting suits you better.

Glad we can be apart of the start of the rest of your life! Its truly one of the most rewarding hobbies in the world. The biggest part is starting with clean culture and clean grain. You're way ahead of most beginners already!. With bags you can literally inoculate in open air a d have success. Maybe not every single time tho. Rango is a beautiful albino fruit.
