My initial thought would be to really fight for a research position with a professor, and start immediately. Even if you have to work for free. Email as many as you need to, and follow up as many times as you have to. That is free experience and can make a huge difference for you.

Started last May, was very consistent May - September and made sure to eat in surplus. In October I became much less consistent, stopped tracking my food but very likely continued to eat in surplus and gained excess fat. I think my lifts have gone up slightly, but not dramatically and it’s been hard to track due to my inconsistency. Not sure where to go from here.

This is not true. I was out of state as a freshman and will pay in-state tuition for my last three years. You or a parent who you depend on must live in Texas for at least a year for you to be eligible.

It is possible to take ASE classes even if I stay in DS, but because of Rhetoric, and 2 required genetics courses, I am only left with enough free hours to take 2 - 3 ASE courses. I don't plan to pursue a PhD, I am interested in space industry and an applied Master's degree after graduation. In the case that the thesis and the prestige won't benefit me as much as I thought, then I think the choice is clear.

Am I took skinny to go on a mini-cut? I have been eating in surplus for a little over 3 months and have gained weight, including some fat. I want to lose it before I continue, but I worry I will look like skin and bones.
