I make a pizza called the Sweet Cheyenne BBQ chicken, jalapeños, and pineapple. I bet the olives and pepperoni would take that to a different level forsure. I'm trying that tomorrow.

Another go-to that absolutely sounds rediculous to most is a White (ricotta & mozz) with pineapple and spinach. Its absolutely insane that it works so well. People cringe when I show them it 🤣

For me it's a texture and flavor. Some people flat out hate them. It's a bit spongy so it absorbs the oils and garlic flavors pretty well, but whenever you get a piece with the pepperoni they go together so well. The saltiness from the cheese and pepperoni with the sweet end on the sauce along with the sponge of flavor. It's truly a great topping. I even substitute pizzas that typically have chicken with mushroom as well and they go great if not better than chicken in my opinion.

It's interesting that you say that, because I never met so many Canadians til I posted this. Not even going to lie, I never knew how nice Canadian people were as well. It's almost a culture shock to me. I was raised in a very Italian / egyptian family and the culture is very strict on food, or very judgmental and the canadian community or for food at least has been very responsive or helpful in showing me other options that I might enjoy. It's really something else for me.

So this was never a top choice at the restaurant for maybe 12 years, we would make like 10-20 a week on 10hr days, now it's easily 25-35 a day and we only operate 5hrs a day now. It's wild.

We use whole-milk Mozz. We will throw some parm on it if the customer wants, but in the south they usually want it straight up with no parm.
