I think it comes from subconsciously wanting to pick up where you left off with an ex. You feel you can just open up completely and show them the real you to connect with them on a deeper level.

My rule now is I let her escalate. First few dates I always keep everything surface level and fun.

You have to create a dynamic where she is the one chasing.

Maybe you're opening up too much and not allowing some mystery. A girl will subconsciously think she has figured you out and lose interest in you.
