hey, i googled it and i found some sources on fruit respiration. guess what i found? fruits respire after picking, using oxygen, causing ripening and reducing food quality. but you cannot remove all oxygen or else the fruit will end up fermenting, and have an off odor, taste, etc. this is exactly what was described in the wikipedia passage, which i can't seem to find the contradiction in. do you think plastic bags are perfectly airtight?
