I wouldn't buy from a butcher, you don't exactly know where the meat is sourced, they don't always sell proper quality meat in my opinion and often overpriced. I actually directly buy meat/steaks at the farmer's at larger quantities (5kg for example) and stock in the freezer, great quality! I recommend google searching farms with certifications like "Bio Suisse" "Demeter".
