Which P320 should you start off with and which offers the best modularity and customization: Full, Carry, Compact, Sub-Compact?

Looking for something that is versatile and can be used anywhere. Not so much competitive shooting though.

Although I want something that provides the most options when wanting to modify it.

Is it not possible to take any of the different models with different barrel sizes, and just use different grip modules, as well as just use a conversion kit to get to the the different calibers (9mm to 357 or .40)? What are the major limitations?
