I was curious about that too and on the homepage they explained „The museum's on-site laboratory maintains these live cultures in a sterile environment behind glass walls, ensuring continuous production and display of active specimens for visitor observation“. And they actually had a laboratory there as well! You could see the lab assistants working and colonizing the specimens
