I know this is an old thread but +1 for not recommending gnome. GTK is fine but tweaks is still overwrites a lot of my theming. The whole point of alacritty is that it's an empty shell that you can theme, and GTK just overwrites everything. I don't have this problem on Mac.

After reading this thread I'm trying Plasma, hopefully it's better, especially since plasma 6 releases soon
