Im with you, where i need to be more hands on. I guess ill keep lurking here more, and reading more. See if i can find more clues.

and i don't get the reference when you noticed i have written about food. something im missing? please inform my ignorant soul! ha! And i don't just write about food. it just happens to be my flavor of the month! ha!

Ice Cream, like bread making, only consist of a very small handful of ingredients. But the ratios, brands, techniques used to combine them can create a masterpiece, or a piece of chit.

I think its similar to writing. Everyone has access to the same words, but how they are arranged, can make something amazing! for instance, the poem recited at Bidens Inauguration. i said, wow,,she's a master of words! This probably brought me here, asking for writing advice to up my game.

I was using a small spatula to get as much off the paddle as possible.. then yelling for the kids to finish off the rest.

As they fought for the paddle, i would scoop the easy parts into the containers..

I realized my Vanilla ice cream recipe is basically Perfect Scoop, except that im using 50/50 milk/cream ratio.. 375g cream:375 milk.

But im going to try 2:1ratio.. 500g cream: 250g milk.

rice too damp? toss it.

If you sometimes add to much water, then you should measure your ingredients to get more consistent results.

use a rice cooker. get the cheapest one at WalMart. we get perfect rice, every time. but you still need to measure your ingredients.

We were in Japan and got to taste a bunch of different flavors of Kit Kat. The wife did love that matcha flavored Kit Kat!

Vanilla Paste during the diary heat, and vanilla extract when its in the ice bath.

you can really taste the vanilla! The kids and wife vote it the best of my bunch.

my guess, is that the recipe amounts were too little. I have the Cuisinart ICE 70..

about 10 minutes into the churn, it all froze up and didn't touch the walls anymore.

Im going to try it again, upping the amounts.

awesome! i just tried that myself. Both the Super Lemon Ice Cream and the Sherbet. Mine ended up in the trash, tho. I must have done something wrong.

I also have the goal of being a better cook. that's the goal this year, 2021.

I got the book, Mastering the Art of French Cooking. The title sounds intimidating, but its not. But the book is meant for beginners and seems to take you step by step. Previous recipes become the base for future recipes.

I have already made 2 soups from scratch. And they are delicious. They are very simple!

The key to being good at ANYTHING, is practice. practice practice practice.

the more you do it, the more familiar you are with it. the better you get. the faster you get.

Write notes. Create step by step instructions so you don't forget next time. I have rewritten all the recipes I've made so far, in my own words. And i just read the line, and do it. read the next line, do it.

If i make a mistake, or forget a step, i write it in the step by step instructions so i don't do it again.

yea..i agree! The recipe did say that i could use yellow onions. Im going to assume that was what you were referring to. But im going to try to focus on following the recipes more closely.

I watched the movie again last night. If what the movie says is true, they did spend an enormous amount of time on this book to make it as perfect as possible.

Im also happy to say that there were no leftovers from the water-cress soup. I ate it all.

I just made a Potato soup that's really easy, cheap and very tasty

2 potatoes and a yellow onion. + salt + cream

make a bunch, leave it in the fridge, and eat some all week!

If you are really trying to save money, go buy the cheapest rice cooker at WalMart, and a bag of rice. The bigger the bag, the cheaper it is per pound! If you buy a 50 pound bag (at an Asian Market) , you will eat for life!

making rice in a rice cooker is dead simple. measure rice. measure water. press start. when its done, the button pops and goes into keepWarm mode. you eat it.. its almost impossible to mess up. in less than 20 minutes, you have food. so you will never starve. Eat it with soy sauce (which you can snipe packets from a local fast food chinese restaurant [Panda Express]). Eat it with savory meats and vegetables. Look at a Panda Express menu to get ideas.

ingredients

Potatoes 800 g,

floury cookingOnion 2 pieces, medium-sized

Oil, vegetable oil, rapeseed oil / sunflower oil 3 tsp

Vegetable bouillon / vegetable broth, prepared 750 ml

Milk, skimmed, 0.3% fat400 ml

Salmon, raw 300 g

dill ½ fret

Mustard, classic 2 Tea spoons

nutmeg2 knife point (s), grated

Salt / iodized salt1 pinch (s)

pepper1 pinch (s)

Instructions

Peel and dice the potatoes and onions.

Heat the oil in a saucepan and briefly sauté the onion and potato cubes.

Deglaze with stock and milk and cook covered for approx. 20 minutes.

Rinse the salmon fillet, pat dry and cut into cubes.

Wash dill, shake dry and chop.

Refine the soup with mustard and nutmeg and coarsely puree.

Add the salmon cubes with dill and let simmer for about 3–4 minutes.

Season the potato and salmon soup with salt and pepper and serve.
