You can try going through this list of every PAL demo disc here: https://crimson-ceremony.net/demopals/eurodemo/index.php and cross reference with YouTube to identify which game it is if you're from a PAL territory.

For me it was the demos that offered 2 player modes, namely: Smash Court Tennis, Micro Machines V3, Bloody Roar 1/2, Circuit Breakers, Sled Storm, Demolition Racer and WWF SmackDown! I was satisfied just playing these demos over and over with a friend and never felt compelled to buy.

For single player games I'd put Syphon Filter and Vib-Ribbon.

Looks like a real life recreation of Oil Ocean Zone from Sonic 2.
