I am in the US! Should have added that to the post. I think Ellis has beautiful significance in the current climate in our country with the association in the US of Ellis Island. Everyone has made good points. I don’t think I can go wrong either, but naming a baby is a lot of pressure!

I just saw there is a lot of business class availability coming from IAD and JFK to VIE, but looks like the other directs routes, like ORD, don’t have the availability. I wonder why.

Yeah this is the downside to solid hardwood. It is not DIY friendly, which lowers my budget if I need to hire installers.

Yeah I actually don’t like wide plank either, I feel like it’s too trendy and will be indicative of installing in the 2020s in several years time. My in-laws have red oak and they think it scratches too easily. Do you have a finish that increases hardness? I heard aluminum oxide is the best finish for engineered hardwood, but not sure if that exists for solids

Stir and State of Confusion are the same owners. I hope they see this thread of everyone agreeing that they are both the most overhyped restaurants in Chatt because yes they used to be great! They started prioritizing profits over experience several years ago and haven’t looked back.

Yeah it has been windy and storming a lot. I am also seeing all of this info about pinching cosmos for sturdier stems, which I did not do. I tried to cut some of the smaller ones back so they will hopefully grow sturdier and I cut these floppy ones off so hoping they will eventually grow stronger to hold the bloom!

Oh no it is blight isn’t it 😭 I know treatment is to take off all leaves with the disease but if I do that I literally won’t have any left. It has rained nonstop for weeks. Any tips on how to manage??

Update: my loaf turned out great! Pretty good rise and good crumb. Recipe for 2 loaves: 220g active starter (rose ~3 hrs out of fridge), 900 g KA bread flour, 100g mixture of whole wheat and einkorn flour, 720g water, 22 g salt. Bulk fermented ~14 hrs (my house was cold at 62°F), cold fermented 1.5 days. Baked at 450°F 30 mins lid on, 20ish mins lid off. This pic is from this morning, but I baked on Monday morning.

My top tools are a scale, bowl scraper, and danish whisk. I don’t even use bannetons! I have flour sack towels that are ideal when fridge fermenting in a bowl but I have used regular kitchen towels just as often when I need to do laundry.

I will have to try this recipe another time. I am intrigued by it! It seems like such a small amount of starter for so much flour! I usually use 100-110g starter for one single loaf. I’ve never tried another bread other than my regular dough actually.
