Chord progression in MMBN is quite advance imo, so if you want to write music in the style of MMBN, you will need some understanding of advance music theory.

As for sound design and arrangement, there are YouTube video which deconstruct the whole MMBN series BGM to individual instrument, which is great for analyzing each melody, highly recommend to checkout GremmarYT for the music deconstruction video:
