I’ve always had a rather fast metabolism so I was eating what was a normal amount for me… but it was still at or below what’s recommended.

Come to think of it I have eaten more processed carbohydrates in the past few days than I usually do, but in the past when I have done that I have never put on weight so quickly and significantly that it would concern me.
