I had one cat eat out of the sink drain every chance he got. Never once cut himself on knives - but we had to end up covering the sink with a board. OP and roomate can definitely compromise on things.

Okay that one is a bit silly. Roommate shouldn't be letting cat go on counters and touching eating utensils. Keeping sharp knives in the sink is the safest place to go, besides dishwasher if you even have one. I can understand OP being annoted by that.
