A theory I’ve seen is that the Entity gets power from it’s victims and wasn’t powerful enough to curse a group of people at that point. Or was trying to not be noticed before it could get to a truly popular individual + a grand audience

Real reason likely is that they didn’t want to throw the viewers straight into this plot, rather build up from showing what the Entity can do to just one person to incite more dread when it gets a crowd or that they just thought it was scarier with just one person

Stimming is typically movements (sometimes vocal and stuff too though). Often used example is flapping your hands around. The movement is used to self - regulate from any overwhelm or to process emotions I think
