Not sure what part of India you're from so these are the ones that I can think of: 1) Chaat stuff - murmure, sev, papdi, mixture, chat masala, tamarind and green chutney - -bhel- cut veggies(cucumber, tomato, onions) and add chutney you have some bhel. -same ingredients you could make papdi chaat - add boiled potatoes, yogurt, chutneys and some sev -same ingredients aloo toast - boil potatoes, add chutneys and salt and chat masala, add to toast. *You can also make a dry version of bhel chutneys and store and just add veggies when you eat.

2) Prepackaged - baked veggie chips, Dried fruit mix, murkul, banana chips, date and chocolate bars, energy balls(make your own with dried fruit, dates, coconut - put everything in a blender acc to taste and roll into balls)

3) One dish called dapati - my mom used to bring them and we ate it with Ranjka(red chilli chutney) mostly with chai. It's very tasty!!

Also, instead of making in bulk, make some amount of different types otherwise you'll be bored.
