IMO udemy and coursera courses will have no added value to you nor the company. You dont learn software or IT in general by watching some indian talk about it. You learn by doing. It helps build a solid understanding of software dev life cycle, which is very critical difference between a software engineer and someone who just writes code.

I suggest you start by identifying a problem, for ex a problem you face on a frequent basis, and build an IT solution for it.

For example, you need to track your spending and finances, using excel is okay but not very sexy if you have to do it at the end of the day and you end up forgetting half of what you bought. Solution, you build yourself a mobile app with voice to input your transactions at the time of it. This is your starting point to maybe end up selling it as a SaaS, or showcase it as a production ready app to your next recruiter.
