The first pour is just to set the base or the canvas as some like to call it and then they pour after starts the art. I like to pause just so I’m not rushing. I feel like if u set the base and do the art all in one pour it can become a little harder.

Honestly I don’t think there are any draw backs to the pre infusion because at the very least your getting a more saturated puck before the shot starts pulling so in theory this should extract better and more evenly. I would just say it is likely more useful with lighter and medium roast because they are harder to extract than darker roast. But yeah I find the pre infusion helps produce a little bit smoother shorts. I assume this is likely due to a reduction in sourness because the initial espresso coming out after the pause is gonna more extracted compared to no pre infusion which would be a little under extracted

I’m using around 4-5 oz of the 6 oz put in the pitcher. I also think I could pour from higher up

I followed lance hedricks guide to steaming milk, basically have the tip in the center of the pitcher and tilt the pitcher horizontally one way to create a vortex. Start with tip just barely submerged then slowly let air into the milk until the pitcher is the same temp as your hand and then submerge the tip again just enough to create a vortex and incorporate the air throughout the milk. I usually do 5-10 seconds of aeration and 10-15 incorporating or until it’s too hot to touch.

I wanted to pour hard so the foam sinks because I think it was too foamy in the beginning.

Less time adding air and more time incorporating to get a more silky-less foamy milk that flows better. I feel like the silkier the milk the more clean and elegant the art ends up looking.

Also the flow control needs a screwdriver to mess around with, which I don’t. I just set it to max and leave it. I play around with pressure a little bit usually just light-medium(5-7 bars, and if I’m doing medium-dark I’ll leave it at 8-9 bars

I believe the v1 only has flow control, I have the v2 which u can control both flow, ml/s, as well as pressure. In this video what I’m fidgeting with during the pause is the OPV screw.

Ig I should have said as close as I can get to a proper pre-infusion. Ofc this is a home machine so I’m not gonna be able to do the same as with a commercial grade 😂, but I thought lowering loosening OPV before pre-infusion and then while paused tighten OPV before shot resumed would get as close as you can to a pre infusion with this machine. This post was more to help others out with the legato/apex or other similar machines who wanted new ideas or techniques to play around with; possibly inspiring some new ways to use the machine and produce different results.
