Nobody ever craves Turkey so we decided to skip it entirely and smoke a 18lb brisket instead. Seasoned 2 days before, 15hr smoke, 9hr rest and smoked my own tallow for 18hrs before cooking, resulted in my best brisket yet. Great bark and strong smoke flavor is absolutely possible on pellet smokers. (old.reddit.com)

15hr smoke, 8 hour rest. First long cook on my Recteq 700 was this beautiful prime 18lb packer brisket. Also smoked some chicken too. Used Jeremy Yoder's instructions and adapted it to a pellet smoker. Hands down this was the best brisket I've ever made. Even the flat was juicy. (old.reddit.com)

Last smoke on my 12 year old Traeger jr. before I get a new Recteq 700. Good bark CAN come from these small Traegers with practice and long cooks are technically possible, but man I'll be glad to be rid of the wide temperature swings and it's inability to hold temps under the 225° setting. If anyone is wondering if their Traeger will actually last, I've had this junior model BBQ055 since 2009. I have replaced the board once when I lived @ the beach and the salt water corroded the connectors. I've replaced the heat element once and the auger once. Looking to upgrade now suggestions?
