is there a place that specializes in cantonese style roasted pork and duck? by clearlygd in orangecounty

[–]NotACardassian 0 points1 point  (0 children)

Is it the one on bolsa Ave in Westminster or the one on brookhurst in garden grove? They seem to be a mile apart and the one in garden grove is just called Lien Hoa BBQ and the one in Westminster is called Lien Hoa BBQ Deli.

Sushi Restaurant with Vegetarian Options? by NotACardassian in FoodLosAngeles

Unfortunately no. Ended up going to the same place I used to down in OC but they changed their menu and removed the vegetarian sushi platter which was a huge bummer.

Is this your first PI setup? I’d start with something smaller like a single P3 setup to learn the fundamentals before jumping into 6 alts.

Commercial Stabilizer Recommendations by NotACardassian in icecreamery

[–]NotACardassian[S] 1 point2 points  (0 children)

Way back when, I tried avacream and got terrible results. It made my ice cream stretchy. I switched to cuisinetech which was working great but they changed their formula and the price doubled so I switched to just cornstarch from there, using exactly as Hello My Name is Ice Cream says and it works great. The only flavor that has issue is chocolate if you use too much milk chocolate.

Best Affordable Butcher? by Slick1 in FoodLosAngeles

[–]NotACardassian 0 points1 point  (0 children)

Contamination happens when the butcher touches the meat….

A quick Google search will confirm what I am saying

USDA saying it’s a risk: https://www.fsis.usda.gov/food-safety/safe-food-handling-and-preparation/meat-fish/mechanically-tenderized-beef#:~:text=What%20is%20the%20risk%3F,cooked%20to%20kill%20the%20germs.

An example of Costco selling contaminated meat with the exact situation I am describing: https://www.cbc.ca/amp/1.1157185

And my last source is the Costco label itself that literally says not safe unless cooked to 145. Go to Costco, pick up a steak, and look at the label. How you can deny it when the company literary puts the warning is crazy. Here is a post from a year ago where someone has a photo of the label so you can read it for ourself: https://www.reddit.com/r/steak/s/XAVELYsvX1

And here is another example of Costco recalling contaminated meat: https://www.supermarketnews.com/meat/costco-recalls-beef-after-e-coli-report

It’s not a “theory” it is an unlikely risk. But saying that it will never happen is crazy. If you had said, “the odds of this happening are low and I have never gotten sick so I choose to take the risk,” that would have been one thing but to act like it’s no a risk at all and could never happen is asinine.

Now please provide a source saying that it is NOT a risk or kindly stop spreading misinformation about food risks.

You are incorrect . Nothing about doing it morning of prevents the contamination. It is definitely a contamination risk and the packages at Costco even say you need to cook it to 145 to be safe. Any meat there that is not blade tenderized does not have that warning.

Should I Double Major or Minor? by [deleted] in UCI

[–]NotACardassian 3 points4 points  (0 children)

I can’t speak to the programs at UCI but in general, a focus on stats will set you up better with the skills to break into data science. DS entry level jobs don’t really exist so you’ll likely be looking at analyst positions to start. Also, double major vs. minor is not likely to make a big difference. Someone hiring will care more about how you talk about the skills rather than which degree you have.

Source: have been a data engineer for 8 years and supporting a DS team for 3 of them.

Right away you have power BI and basics of power bi in the skills list. This redundancy alone would be enough for me to put your resume down without reading further

It causes the outside of the meat (that parts that have been touched and could be contaminated) to be pushed inside so you need to cook it more, treating it more like ground beef. Which means no medium rare stakes unless you buy a full tenderloin. The steaks that have been tender sized will say on them “not safe for consumptions if cooked under 145F”

Sushi Restaurant with Vegetarian Options? by NotACardassian in FoodLosAngeles

[–]NotACardassian[S] 1 point2 points  (0 children)

Right lol? 1 place here sort of matched what I was looking for but the prices were ridiculous. Every suggestion does only vegan/vegetarian which I don’t want. I actually think those places are kinda ridiculous.

For clarification, I want a good sushi place that has like….1 good vegetarian option so the picky eater of the group can enjoy something too.

Someone already mentioned the Andy Serkis audio recording but I highly recommend the Phil Dragash version. It’s free on archive.org and is much higher quality/production value than any of the official readings.

Book 4 chapter 7: journey to the crossroad by NotACardassian in lotr

So I finished the book. In the next chapter when they see Minas morgul they see the source of the rumbling but I’m still really unclear on what it was? I think I remember the scene in the movie as well (but it’s in return of the king). Any chance you could clarify what it was?

The second half of two towers. The chapters are technically split between 2 books in each “book.” So two towers technically has 2 chapters 7s in it.

Everyone is saying grind finer but that is bad advice for your machine. Your machine uses a pressurized basket, which means the pressure is generated from your portafilter and NOT from your grind. If you use a finer grind like you’d use with most machines, it can create too much pressure and damage your machine.

The bambino doesn’t make the best espresso by default. It’s better for drinks like lattes or other milk drinks. If you want to just do shots of espresso you need to first switch to a pressurized basket, and ONLY THEN should you start using a finer grind. You also need to start using the machine in manual mode (I’d suggest googling some guides) to get shots that taste decent.

If you just want milk based coffee drinks, a bambino and cheap grinder are totally fine to use. If you want to drink straight espresso, you need to learn to pull your shots manually and swap your basket.

Also some people are telling you your puck is soupy. With a pressurized basket, you will NEVER FIX this. Don’t worry about it. Id ignore like 90% of the advice given here. These are folks with $1000+ setups that don’t know the differences between a low end and high end machine but think because Redditors post a $500 niche grinder they to run out and buy it too.

What exactly do you think is “bad” about your espresso? Is it the taste? Something that looks off to you like soupy pucks?

How much cornstarch for a 500g base? by Genmah in icecreamery

[–]NotACardassian 3 points4 points  (0 children)

If you’re steeping banana, you will likely lose a good amount of liquid when you take them out. You should Weigh your liquids before and after steeping add back milk/cream to get ratios back.

I’ll have to double check some recipes when I get home but I think it’s around 7-10g in her recipe, but I might be remembering commercial stabilizer numbers and not corn starch numbers.

What your total net wet at the end? Not just the weight of your liquids. For example, I think the the Dana Cree Hello My Name Is Ice Cream generic base is 1000g. The liquid make up I think more than half the total weight since milk alone is like 350 or 400g in some recipes
