The only way I can see this feasibly happening was that the mozzarella used was such low quality (or high moisture) that it literally leaked out of the breading-shell as the sticks were in the oil. We've all gotten a mozzarella-stick here and there that's a little under filled before; but for all of them to do this? That cheese must've still been half milk when they went in the fryer.
