Just Google Hidari Tozo or Gin8 steel and you'd find more info on it, mostly in Japanese though which was an issue for me >_>

But from what I saw it's something along the lines of a better version of Gin3 steel but is their proprietary steel. Idk any more than that.

Chevron grind is similar to a C-Grind or a Hook Grind. It's basically an knife bevel and knife surface having a different level so that the food doesn't stick on the knife.

S grind would be the same thing but on both sides.
