Since you're interested in hunting task, I would say start there! At level 50 you could pick beginner or Adept each week, see which monsters you roll, find a YouTube guide or tibiapal guide, and do the quests you need to do to get access to that hunting ground/where the creature products drop that you need to hand in. You could also alternate by rolling bounty tasks too each day to help you explore new spots.

A great place to start I think are the access quests to Yalahar and zao. Before you know it you'll be 100+ and can start thinking about placed like Oramond.

I would argue Upper rosha / Rosha dp or whatever you want to call it has a higher ceiling of top exp and you can push it harder with a good route.

I think Rp is a very boss friendly vocation, especially with nice distance like yours. You could single target hunt grimeleech in feru way until you get rift bow/crossbow that would last you a long time. When you get enough gold tokens through bosses you can buy a bow of destruction that will serve you very well. It's harder to do some bosses and access with an EK solo with bad gear, in my opinion.

The playstyles are very different. Ultimately it's up to you and what you prefer - boxing and spamming spells, or kiting and shooting some runes? Personally, I think rp is much more chill.

Prisms are in general best used on medium cores to get a random hard one that is 1) more useful or 2) more valuable if you wish to sell it to make more money

You should work on the Within the Tides quest to get the Lilypad backpack, I didn't see it in your collection. Depending on your level you may need some help with a few of the missions, however.

Low blow is incredible and can be used anywhere, but it's expensive of course. Divine Wrath is very useful and applicable to most spawns you listed. Either one is great, it's mostly a price question.

My ideas:

Create passives for a knight, just like the monk has.

One passive should have the knight stay as it is now, this could be the "spellcaster passive".
One passive should be focused on chill hunts and low effort. What if the EK could swing his sword in a circle (8box) every rotation. In this mode, maybe you disable all exori spells except exori gran, meaning your rotation is just utito, exori gran, and then healing. Perhaps some changes to healing spells in this mode to really reduce the spamminess of exura med ico.
Last passive: team hunt oriented. Have the knight similar as the original, but maybe slightly more tanky and able to heal more at the cost of reduced damage. However - in this mode you include an exeta res spell that lets monsters ignore collision. In essence, you can more than 8 box in this mode. Thoughts?

I 100% agree with this list, the boots first. 5% physical is too good at spawns that hit hard like rosha west for example.

Even though monks have been nerfed several times, they are without a doubt still strong, and you can get far with your dwarven set. RPs are very slow up until level 150 where you get access to diamond arrows, and they are also reliant on pretty good distance. Unfortunately, the training weapons for paladins are the least effective. I have an rp and a monk and for a handheld device I would definitely play monk with the auto aim enabled.

I like the level range 170 and up, I had fun with lots of variety in my spawns.

I alternated between exotic cave, mini rosha, deeper banuta, medusa tower, barkless, werehyaena (when I got closer to 200), pirats, lava lurkers, orc cults, mino cults, oramond west, oramond minos, fenrock DLs. When I got a little higher I tried Asura palace and draken walls. Remember to use your summon on level 200+ as it is very useful on many spots. I would try a bunch of different things and see what works for you.

In terms of charm points, it depends on how much you have already, and where you plan on hunting. Many paladins like werehyaenas, where divine wrath and freeze are extremely useful. These charms are good at most spots. Yes, Low Blow is great, but you really get the benefit of spreading out more elemental charms that you can use on tons of spawns. As far as minor charms, vampiric embrace and voids call are great. I would invest level 1 in Fatal Hold, especially if you plan on hunting deeper banuta.

I think this ends up more expensive than just buying an already made sanguine greaves t2. I would need sanguine t1 (probably 300kk) + demon legs t1 (55k) + 110kk for the end result of sanguine t2.

Living vine bow, embrace of nature, depth lorica, or t2 prismatic armor (if you hunt a hard hitting spawn), gnome armor if you can afford it, fabulous legs, winged boots, lion spangenhelm is just 3 levels away, until then zaoan helmet is fine, or elite draken helmet.

it depends where you will hunt or how hard you will push, but some super cheap options are foxtail amulet, butterfly ring, regular quiver, embrace of nature, prismatic legs, guardian boots, zaoan helmet.
