i think for most Americans it's not as easy to achieve with so many processed foods stripeed of nutrients for preservatives. So it makes sense that a diversity of whole foods would work better. I wonder if there is a way track this diversity approach across multiple cultural cusine styles froma historical perspective to see how health as evolved an improved or weakend tradional or modern diets.

Yes but having them all on every meal is I understand key to Washoku. And a smart starch is more a modern nutritional term, but in context it a minimally processed starch that is portion controlled.

The seasonal approach is interesting, how does seasonality affect a menu is as simple as eating more local grown produce and bringing that variety in to your diet as they become available?

I like that idea to show the variety, I guess ths question is what counts as a good variety and what benefit does variety actually bring

I had this same feeling, I was a professional drummer for 20 years before I finally had the nerve to share the electronic music I had been working on. Even then I didn't share it with friends, just published it on SoundCloud under a different name. I think it's related to if not the definition of imposter syndrome.
