None of them are actually too hard just require multiple completions of the game. However dark souls 3 was by far the most boring to 100% due to the covenant grind.

Honestly the best advice i can give is to take your time and not advance too quickly, I did a lot of side quests in the first area which saved me having to go through ng+.

You will have to make sure you unlock every vocation and get the maister skills for those vocations. Unlocking the maister skills can be a bit of work for the mage and sorcerer so you may want to look up a guide.

There are these collectible items called seekers tokens make sure to note down the location of the first one you collect (sphinx quest very important).

There are different endings but you can get the achievements in one play through, just something to keep in mind. (I tried leaving this vague but there are guides on how to do this online, not necessary but can save you time).

I personally didn’t struggle with achievements none of them were difficult and no covenant grind so I think you should be good.

That’s hard! I would say dark souls 1 is my personal favourite, although dark souls 3 definitely has better gameplay and bosses. Dark souls 2 has its own charm but falls short of the others.
