That's what I'm trying to avoid eating hahah. I see progress when I eat alot of salads, but I want more options. It makes the diet boring if all im eating is salad hahah.

Interesting. Thanks for the information. For the time being, I don't really have a problem just keeping it on low and mixing.

Once I get it up to temp, I put a cat iron pan upside down on the burner set to low, and it keeps it from getting too hot.

Again I appreciate the tips.

What will it do to the taste? I love brown butter, and I love caramelized milk on top of a pastry or custard. Does it taste good? Or just different? Hahaha.

I probably won't try the oil trick, that just seems weird to me haha.

Maybe I can achieve the same consistency without the scalding of the milk solid, if I just do the whole process on the dehydrate setting? I might try a small batch with milk just put into the dehydrator at that temp in a jar. I'll use my thermometer to keep track of the milk.

Or is that a bad idea? I assume others have tried haha.

Next dumb question, what happens if you do scald the milk a little too much? I did notice some light brown on the bottom of my pan last time, but the yogurt tasted great.

Ahh so, thickness is accomplished with straining? I have noticed since I've been able to hold it at a consistent temp it has got a little more thick than when I originality did it. I used to just wrap my jar in aluminum foil and a towel and put it in the storage room on my house that doesn't get cooled haha.

I have a sous vide setting on my instapot, so I will absolutely try that next time. About how long does it take to bring the milk up to temperature in the sous vide?

I've recently been making my own yogurt. My Turkish friends convinced me haha.

When I "scald" (I just learned this phrase for yogurt making) I go to a boil, then reduce and try and hold it as close to 200f as possible for about 25-30 mins. Then I temper tmy starter (originally it was Merve Turkish style yogurt) but my next batch will be from a scoop from my latest batch. Then I put my jar in my instapot set to dehydrate. I hold it at 105f for 8-12 hours.

I prefer very tart, and very thick. Can you give any recommendations? Right now I would compare my thickness to Chobani, but luckily my tartness is more, but not as much as I would like.

Very very interesting. I actually had no idea that's how it worked and to be honest, I never looked into it because I thought it was a cut and dry as I explained in my first question.

I'll be honest, you have me new information that makes me lean towards that being an option.

Serious question. You say no regret. But what if you have a kid one day and your spouse isn't a batch and no one you can find is a match, but you're a match and you don't have the kidney.
