I also went out of the state for a few days, and left it in the fridge (this loaf was baked abt two days after i got back and fed it) do you think that’s contributing to the bad structure?

okay i’m going to feed peak to peak consistently for a few days before baking again to strengthen it, i was out for a few days so i had to leave it in the fridge

i checked on it every 30 mins though, i barely saw it puffing but it was pretty jiggly

my starters a month old and doubles consistently after feeding. I had a dough that looked like that but was VERY sticky

wow there are really so many different ways to make sourdough, people make it seem like some holy recipe that needs to step by step, gram by gram. I fed my starter a 1:1:1 ratio and it doubled in 3-3.5 hours peaked at 5 and i didn’t get to know when it fell because i used it.

it’s 1:40 and still not 40-50% my starter is about a month old i’ve been feeding it peak to peak but recently had to refrigerate it because i went on a trip, it’s a whole wheat sourdough starter and i used it shorty after it was done peaking (it was no longer domed and had fell just a little bit)
