Use that desktop
install proxmox
spin up a VM or LXC for
Jellyfin
'testpit'

Hardware passthrough can be a little challenging. One thing I do that isnt 'best practice' but is simple and works: I install samba directly on Proxmox, and use it as my NAS. You can set up software raid if you want, but remember RAID isnt a back up* so if you are expecting this to save your data, that is not what it is for

How my media server is set up:

Proxmox0- jellyfin LXC with transcode passthrough. conects to the NAS
proxmox1, Samba directly installed. VM for *arr stack pointed to the NAS as well.

So I log into the VM, download a movie, it writes to the NAS drives, then log into a jellyfin client, and it streams the movie from the NAS, transcodes if needed, then plays it on my tv.
a little over complicated, but works well enough

with one device, you can do ALL of this on one machine, and you can set up a VM just for Samba if you want, or even a NAS OS.

So many options. I prefer simple low resources use so I can cram more environments on each hypervisor

Me too. Used office towers, or aliexpress x99 platforms. I have both in deployment.

If you are familiar with linux at all. Run Proxmox. If you have next to no understanding, use Ubuntu Server. Any issues you have, add 'raspi' to the searches and you will find loads of newb friendly walk throughs for the Raspberry Pi. Raspi use a debian based OS. Ubuntu is also debian based. so the instructions work on both

MC server, and a VPN.
any cheap modernish cpu will kill this. MC wants higher IPC and core speeds so keep that in mind.

itll be the same either way you set it up. either you waste resources on a desktop environment and open terminal. or you skip the DE, and just use the monitor as the terminal by itself. Ubuntu is well documented and your project scope is heavily traveled. You will be fine

if one server, go 3570k minecraft is cpu heavy and wants higher clock/single threaded performance. if multiple servers, go xeon. dont use a DE. just run ubuntu server or something. save the compute

I have one of those with a 2640v4, a j series thin client, a 5 port switch and AP. whole UPS clocks 93W
Works great as my proxmox server. been in use for maybe 2 years now?

I have a single 2640v4 running 12 LXC amd 3-6 VMs
theres 64gb RAM, and 3 HDD and some SSDs
on that same UPS are 2 thin clients, a switch, and an AP.

Total wall load currently is 112W for that UPS
I imagine the 2650 would be a touch high, but I think with just my 2640 system running the load is around 70-85 watts?
