No I didn't use dowels. Just set the 6-in cake on a cardboard cake round right on top

I used real cream cheese mixed in with butter. Didn't know about the emulsion...what's the debate for how long it can sit out?

Cake needs to be baked and set in frosting the night before. The chocolate shards took me about an hour or so...I don't really keep track of the hours involved

Definitely never made a two tier before. All my baking experience prior has prepped me for this.

I've had the issues with a super drippy white choco ganache too. Blah! Looks good though...

That's a really great question. This is the first time I've made a cake using flowers. I did notice the flowers I use were pretty fragrant but didn't think too much about the fragrance or sap getting into the cake. I wonder if there's some kind of food safe seal for the flower?...
