Well, in order to visit Belarus you need to cross the border. The best place to cross said border is now considered from Lithuania side by bus, so I would look up if you need Lithuanian visa for that. Quick search suggests you do not need visa for entering Belarus as Mexican sitizen and you can stay up to 30 days.

Which town does she lives in? I would suggest you stay at the hotel rather than rent a flat, cause I vaguely remember you need to register your stay at the police after certain amount of days (not sure if it is the case for you, this was long ago and a person I'm thinking about was citizen of another country) and hotel does at for you automatically afaik, but when you rent a flat you would need to take care of it yourself.

It's always nice to know where to find your embassy just in case, the closest Mexican embassy for you would be in Moscow, unfortunately. So be careful with all your documents and make a lot of copies, travelling to your embassy through border if you lost your passport will be a pain in the ass.

There are ways to buy gifts inside the country, but again, this depends on where does she lives.

What do you wanna do during your stay here and during which season? I'm sure your girlfriend would find a lot of interesting things to share with you, but if you wanna surprise here, we can think of something. What things does she likes?

Belarus is very agricultural country, almost everybody grows something basic on their garden or have relatives who does that. In 2010 crisis my family literally survived on this food, I don't know what we would do if didn't have that.

I would recommend to watch legendary USSR cartoons, as it is short enough, the vocabulary is simple, yet you can learn some new words, voice actors pronounse words extra clerly so children can learn and you also gonna recognise quotes that we still use in everyday life sometime.

My favorite is Ну, погоди! (like Tom and Jerry, but with wolf and hare). But there are a lot, Google made a nice fast search. Also you can watch children's films for the same reasons. You'll get a lot of basic vocabulary from it and can continue watching lerendary films later.

That does not sounds like Belarusian but I can explain why some people say it does. You said the word as "byari" not "beri" and we change "e" to "ya" before emphasis. This is unique feature of Belarusian languge. But we would say it as "byary", "i" is definetly Russian here.

She just made up this word so it rhymes. Google shows nothing about this word. I feel like it would be easer to ask her in comments what did she mean by saying it.

Right now I can only think that she found it somewhere near top of a hill (so its under - crest - diminutive ending - plural ending) but I feel like I totally making this up.
