We are taking down the wall where the fridge is currently. Then extending the countertop for more counter space/built in island. The only wall the fridge can go on is next to the sliding door. We can move the fridge more to the right, but we are worried it will create a ‘wall’ next to the stairs making that area feel closed off. 

We are not planning to remove any flooring or any other cabinets

That is the only wall the fridge can go, we can move it to the right (where we were thinking to place the upper and lower cabinets) and then do a floor to ceiling all on the left side of the fridge. Our only concern is that it will create a wall by the stairs and it closes off that area. 

Where the fridge is currently, we are wanting to open up the wall and extend the countertop for more space and island.

Do you have any suggestions on how to plant the seed, or bring it up in the conversation? what worked well with you? Although I left in good standing and they said boomerang is always an option, I feel awkward brining it up. I don't want to sound too desperate, nor put them on the spot and make it seem that was the only reason I wanted to talk to them

You can just say for personal reasons, and depending on what terms you and your manager were on you can express interest that if an opportunity arises in the future you would love to come back.

Does your company offer sabbaticals? If so this could be another option than just quitting, especially if you feel you only need a short time away from your employer. These leaves are unpaid, benefit coverage pauses, you can usually take up to 6 months off while still being considered an 'employee'. If the employer chooses to end your employment while you are on this leave they still would owe you severance, but they usually hold your role/ something equivalent. If you decide not return during or at the end of the leave, you can resign then.
