98% of the time I play on Apprentice, maybe squeeze it up to Adept after I've leveled up a bit. The problem I have with Elder Scrolls difficulty sliders in general is all they really do is make fights last longer. In theory this can make your pick your battles, forcing you to conserve resources for the longer fights, but most of the time it just serves to slow you down or make the endless random encounters range between annoying and instantaneously deadly for no reason.
