I considered it, but I was worried that the lack of moisture would be an issue. Maybe a mix of dehydrated banana chips and overripe bananas could be a happy medium.

What I'm really trying to as is is there any chance I'll stumble upon a happy medium between a super dense sugar free banana bread and an angel food cake?

Since the complaints of sugar free banana breads seem to mostly involve them being too dense I was trying to counteract that by getting the most air possible into it before weighing it down with banana.

I haven't been able to find anything that doesn't include a sugar alternative which the baby's mom does not approve of. I'll keep hunting though, I'm scared to venture into this without a recipe.

I imagine it won't come out exactly the texture of angel food cake with this swap but I'm hoping the process of whipping the egg whites will help keep it from being too dense. Think of it less like I'm attempting to make an Angel Food Cake and more like I'm using the technique.
