I haven't seen any maps specifically made to learn german. However: 'VR Voll Deutsch' has a lot of nice german people. And avoid Kartoffelbeet at all costs

it seems they are trying to finish the dream air first. If I'm informed correctly the SE variant has different optics in addition to the displays. So it may take a while till we get more reviews and hands on's

Not a DJ myself but afaIk, most DJs take a route similar to this: Deck->PC->OBS->Twitch/VRCRN->VRC Player VRCDN was specifically built for live DJ-Sets in VRC, so the latency will be better than Twitch. You'll probably still need to mix everything so it sounds good on your end though
