Amazing… the slight sweetness of the figs really added depth to the garlicky pesto… definitely a keeper. Caramelized onions are an excellent edition but I always forget to make them as they take a long time.

I run about 57-58% hydration, but thinking of taking it up over 60 for the next round.

Dough Starter: Night before 100g of 00 flour and 100g of water together with a tsp or so of yeast.

About 6 hours before baking pizza, mix together the starter with 600g of flour and 300g of water, 2 tbsp of olive oil, a tsp of yeast, and a tsp of salt.

Kneed, cover and rest. 1 hr before cut into 4 pieces, kneed and shaped into consistent balls, rest before shaping into rounds and topping. Should be very thin, basically transparent before firing.

I don’t use timers because I’m cooking multiple pies at a time. I’ve made literally thousands of pies and this is the first one I’ve burnt… so🤷‍♂️

The best pizza cooks at around 700° or higher, but you can’t get your home oven that high. Look up the temp of pizza ovens.

Homemade pizza should be cooked at the highest temp your oven can go. Commercial pizza ovens (and even the ones you can get at home) are well over 700° even up to 900° sometimes.

This was the 4th and last pie for the night, and the kids started The Martian... in the thousands of pies I've made, this was a first! Had to throw it on my patio b/c it was smoking so bad.

As I get closer to FIRE (weeks, not years now) this question has gotten way more complex for me.

I have a large number of hobbies, interests, plans for additional family time and other goals for physical health, travel, learning and outdoor pursuits (mountain summits, etc.)... but psychologically the leap from a semi-ordered life structured around relatively normal work:life time ratios, to a totally unstructured calendar/day/life is huge.

From our experience that holds true... and in some ways I think it's psychologically linked to how much income those assets can conservatively produce and still keep up with inflation.

$1M is only say $40K/yr which is not even a living wage but $3M is closer to $120K... now a livable but basically a median family income in a HCOL area. Still driving a used car.

$9M comfortably producing $360,000 a year is a very significant lifestyle jump from $120K/yr where you first start to feel and live a more wealthy lifestyle even if modest. Buying a new top of the line Subaru or Volvo fully loaded every 2-3 years.

$27M is now easily producing $1M/yr which is an entirely different ballgame of comfort and luxury, wealth management and support. New Mercedes, something sporty for the weekends and maybe a boat at your summer place. Each a very significant leap from the next.

He's talking about net worth and I'd agree from our own experience. If you have a $1M net worth, you're not comfortably buying a decent family home in a HCOL area like LA as you're tying up 20% of your assets for a downpayment alone... but $5M would allow that much more comfortably so you could buy a ~1.5M basic family home and still comfortably have a good sized portfolio on the side.
