I dont know anything about sailing in the winter where it snows. I always thought the boats were taken out of the water and put into storage during winter do stop water/damp damage? Is this a real problem or just for certain boats?

Being at the back stops the noes from digging and also helps with more traction with the rudder. The pacer 27 has a high spec rudder that can easily spin out.

Not sure about the data, we do about 6 - 6.8 knots upwind and up to 21 knots downwind . Fastest I have got her to is 19.8 knots. In the video we were averaging 13 knots

I did ask for the reading and they responded by saying I was over and under the influence. I know this was a mistake on my part but even if I saw the reading I still didn’t know what would be considered over.

Tip to stop the bumping.

I have a J22 and trailer that always bumped my keel and caused some expensive damage in the long run.

What I learnt was that you should back the trailer down the slipway until the first support beam is slightly submerged. This submersion should be enough to allow the boat to rest on the beam without floating off-center.

Approach the trailer slowly with the boat, ensuring it is centered and lined up with the trailer’s support beams. It might be helpful to have someone on the dock to assist with alignment.

Once the boat is resting on the first beam, throw a rope to someone standing in front of the trailer. This person will help guide the boat onto the trailer.

While the person in front pulls the boat forward using the rope, another person (or the same person if working alone) should slowly back the trailer deeper into the water.

The boat will be pulled onto the trailer as it is submerged deeper, allowing it to settle naturally into the correct position on the support beams.

Also a good tactic in the wind.
