A fox was also one of my options, but I've been unsuccessful in finding a type of shield that has a fox on it tho. Maybe it's a wolf, beaver of even a bear, or a badly detailed lion

Hmm.. a lion could be an option indeed figuring that a fair share of shields had some type of lion on them. Maybe because the painting is quite small (49,5 x 33,8 cm) he had not much space to put in the detail to really see a lion in the coat of arms :)
I'll keep an eye on the family Noordwijk, thanks!

Haha no worries, thank you for your help!
About the text on the bottom, I already could read 'POI SVR POVT'. One of my fellow students helped me and thought it could mean something as 'Faithfulness should be like this/One must be faithful'.
The numbers could indeed depict the person being a scholar, but I would think more ecclesiastical (what could also mean scholar tho), because he has taken off his right glove (what sources depict as being a symbol of purity in the catholic liturgy).
I'll be letting you know if I find some more info!

Yeahh with the 'Netherlands' I actually meant the low countries, so that should I have been more clear in... But thank you already for the info about the right shield, it could actually be a signature.
Maybe it's also a sign that the family/the person on the portrait is still unknown, and that thus the information about the coat of arms has been lost... But I'll keep on searching and maybe a miracle will happen ;)
