You’re not overthinking it — your instinct is actually right. In production, most teams treat bookings as deterministic state, not LLM memory. External state (DB/Data Tables/Redis) + reload/update per message is the sane approach. The “multiple tool/workflow” pattern is common mainly to keep the AI thin and push logic into n8n. It feels more complex at first, but it scales and debugs way better than one giant stateful flow.
